This fresh and zesty spinach lunch salad that provides “safe carbs” that will give you a boost of vitamins, minerals and roughage, and healthy fats from the avocado and macadamia nuts.
To Start this recipe, make the vinaigrette about a half-hour in advance, to give the garlic time to meld with the other ingredients.
Olive Oil Vinaigrette
INGREDIENTS:
- 3 tbps Olive Oil
- 2 tbsp Red Wine Vinegar
- 1 clove garlic, smashed
- Salt and pepper to taste
TO MAKE:
- Place the smashed garlic in a Mason jar or recycled container with lid.
- Add the vinegar, oil, salt and pepper.
- Place cover on jar and shake vigorously.
- Let sit minimum of 30 minutes so that the garlic oils can mingle with the other ingredients.
