Avocado and Greek Yogurt Chicken Salad

Ingredients:

  • 1 Avocado, remove pit and skin
  • 1/2 cup Nonfat Plain Greek Yogurt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 2 cups finely chopped or shredded Cooked Chicken Breast
  • 1/2 red onion, chopped
  • 1 small Lime
  1. Cook chicken breast in olive oil, until cooked through.
  2. Put chicken breast in refrigerator to cool.
  3. In a medium bowl, mash together avocado and Greek yogurt until smooth.
  4. Stir in garlic, onion powder, sale and pepper.
  5. Finely chop or shred chicken.
  6. Add chicken and red onion to avocado mixture and stir until all ingredients are combined.
  7. Squeeze in half the juice from the lime.
  8. Enjoy!
