AMB Spinach Salad

This fresh and zesty spinach lunch salad that provides “safe carbs” that will give you a boost of vitamins, minerals and roughage, and healthy fats from the avocado and macadamia nuts.

To Start this recipe, make the vinaigrette about a half-hour in advance, to give the garlic time to meld with the other ingredients.

Olive Oil Vinaigrette

INGREDIENTS:

  • 3 tbps Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 1 clove garlic, smashed
  • Salt and pepper to taste

TO MAKE:

  1. Place the smashed garlic in a Mason jar or recycled container with lid.
  2. Add the vinegar, oil, salt and pepper.
  3. Place cover on jar and shake vigorously.
  4. Let sit minimum of 30 minutes so that the garlic oils can mingle with the other ingredients.
